Ingredients
  • 1 onion, sliced

    2 cups of frozen spinach (defrosted) or substitute 1 large aubergine

    2 tomatoes, roughly chopped or 8 cherry tomatoes, halved

    2 tsp garam masala powder

    ½ tsp dried chilli flakes or powder

This is a simplified version of my favourite simple masala. You can substitute aubergine if you like, but you will need to add a little more oil and cook for a little while longer.

  1. Place a medium sized pan with lid, on a medium heat on the hob. Add a splash of oil and the sliced onions. Fry gently until they turn translucent and soft.
  2. Add the spinach, garam masala and chilli. Simmer for 6-7 minutes.
  3. Add the tomatoes and simmer for another 3 or 4 minutes. Season with ½ - 1 tsp of salt to taste.
  4. Serve in a flatbread or with rice, and a dollop of natural yoghurt.
