Ingredients
  • 2 onions, chopped

    3 cloves of garlic, crushed & chopped

    2 tins of chopped tomatoes

    ½ - 1 tsp of dried chilli flakes or chilli powder

    Olive oil

The longer you cook this for, the better the flavour. Add more vegetables if you like (mushrooms, courgettes, peppers, quorn, etc). Serve on pasta, gnocchi or in a jacket spud.

  1. Place a medium sized pan with lid, on a medium heat on the hob. Add a splash of oil and the onions. Fry gently until they turn translucent and soft.
  2. Add the garlic, and fry for another minute, then add the tomatoes and chilli flakes. Bring to boil and simmer gently for 10 minutes. Add a little more water to stop it sticking if needed.
  3. Add ½ tsp salt and taste. Add more salt if needed.
  4. Add another splash of olive oil and stir well. Serve immediately. Add some grated cheese on top if you like.
